You Will Need

For the Burgers:
2 lbs. Ground Beef
1 packet Riega® Perfect Burger Organic Seasoning
8 small Flour Tortillas
8 slices American Cheese
Shredded Lettuce, optional (for topping)
White Onion, finely diced, optional (for topping)
Dill Pickles, optional (for topping)

For the Burger Sauce (Optional):
½ cup Mayonnaise
2 tbsp. Sweet Pickle Relish
2 tsp. Yellow Mustard
1 tsp. White Vinegar
1 tsp. Garlic Powder
1 tsp. Onion Powder
1 tsp. Paprika
½ tsp. Sugar
¼ tsp. Salt
⅛ tsp. Turmeric (optional)
½ tsp. finely minced White Onion (optional)
1 tsp. Dill Pickle Juice (optional)

Directions
  1. If making Burger Sauce, add all ingredients to a small bowl. Whisk until completely smooth and combined. Cover and refrigerate for at least one hour (overnight is best). Stir before serving. Keeps in the fridge for up to 1 week.
  2. Gently mix ground beef and Riega® Perfect Burger Organic Seasoning in a bowl. Divide into eight portions (approximately 4 oz each) and roll into a loose ball.
  3. Lay out a small tortilla and place one beef portion in the center. Using clean hands or a spatula, spread the beef into a thin, even layer across nearly the entire tortilla. Aim for approximately ¼-inch thickness or thinner. Repeat with the remaining tortillas.
  4. Heat a cast-iron skillet or griddle over medium-high heat. Allow it to get hot before adding the tacos. Place one tortilla into the skillet, beef-side down. Immediately press firmly with a spatula to ensure the beef makes good contact with the skillet. Cook for approximately 3–4 minutes, until the beef develops a browned crust and is cooked through.
  5. Flip the tortilla so the tortilla side is down. Add one slice of American cheese directly onto the beef. Cook another 1–2 minutes until the tortilla is lightly golden and the cheese has melted. Check that the beef reaches 160°F. Remove from the skillet. Repeat with the remaining tacos.
  6. While the tacos are warm, add shredded lettuce, diced white onion, pickles and burger sauce (or your toppings of choice). Gently fold the tortilla into a taco shape. Serve immediately.
