Salmon and Roasted Veggies Sheet Pan

(Serves 4)

There is nothing like a one-pan meal to make weeknight cooking or meal prep so much simpler. Not only will you have a quick clean-up but you’ll have a well-balanced meal featuring tasty salmon and fresh veggies. Just season with our fan favorite Ginger Sesame Seasoning, throw everything on a sheet pan, bake and ENJOY!

You Will Need

1 packet Riega Ginger Sesame Bowl Seasoning
Oil of choice for brushing
4 pieces of salmon, skin off (6-8 oz. each)
2 heads of broccoli, chopped to smaller pieces (or 3 cups broccoli)
2 cups mushrooms, sliced
1 bell pepper, chopped
1 red onion, chopped
Salt and pepper for seasoning
3 cups rice of choice, cooked

Directions
  1. Preheat the oven to 425°.
  2. Brush salmon pieces with oil. Season with about half the packet of Riega Ginger Sesame Seasoning, or until the tops of salmon look evenly covered.
  3. On a sheet tray, lay cut vegetables, toss with some oil and pour the rest of the Riega Ginger Sesame seasoning over them. Toss the vegetables in seasoning to make sure they are evenly coated. Season with salt and pepper (optional).
  4. Lay the salmon on the same sheet tray and bake for about 12-15 minutes, or until the salmon looks opaque and flakes easily.
  5. Create a bowl over a bed of rice. Top with your favorite sauce and enjoy!
