Plant-based Fajita Bowl

(Makes 2 bowls)

No meat? No problem! This plant-based fajita bowl has the perfect amount of flavor! In just 3 easy steps, you will have a tasty bowl made exactly to your liking. Top with your favorite salsa to give it an extra kick.

You Will Need

3 cups main vegetable/protein of choice (mushrooms, broccoli, or cauliflower work great!)
2 teaspoons oil
2 tablespoons Riega® Veggie Fajita Seasoning
2 cups cooked Fajita Dirty Rice
1 cup shredded iceberg lettuce
1 cup sweet corn
1 cup black beans
Guacamole or sour cream for serving (optional)

  1. Toss vegetable of choice in oil, then coat with 2 tablespoons Riega® Seasoning. 
  2. In a large pan set to medium high heat, add your vegetables and sauté until cooked. 
  3. To assemble the bowl, add cooked Fajita Dirty Rice, shredded lettuce, corn, black beans, guacamole, and/or sour cream. Enjoy!
