Lime Chicken Bowl with Pineapple Salsa

(Makes 2 bowls)

A zesty, citrus explosion! This chicken bowl checks all the boxes for a well-balanced, nutritious meal. Perfect for meal prep, or a quick and easy dinner.

You Will Need

For the pineapple salsa:
1 cup diced pineapple
½ cup bell pepper, small diced
½ cup tomato, small diced
⅓ cup cilantro, chopped
4 tablespoons lime juice
¼ teaspoon black pepper
Pinch of salt

For the lime chicken bowl:
2 cups cooked rice of choice
2 boneless, skinless chicken breasts
2 tablespoons oil
2 tablespoons Riega® Zesty Lime Chicken Bowl Seasoning
1 cup sauteed veggies of choice (we chose green bell pepper)
Avocado slices for garnish
Lime wedge for garnish


1. In a bowl, add chicken breasts then coat with oil. Add 2 tablespoons of Riega® Seasoning to coat chicken, then set aside.
2. In a small bowl, add diced pineapple, diced bell pepper, diced tomato, chopped cilantro, lime juice, salt and pepper. Mix and set aside.
3. In a medium sized skillet set to medium-high heat, add oil. Once sizzling, add chicken breasts and cook on each side for 5 minutes (or until cooked all the way through). Remove from the pan and let cool for a few minutes. Add additional sauteed veggies of choice to the pan and cook until tender.
4. To assemble the bowl, add rice, pineapple salsa, sliced zesty lime chicken, sauteed veggies, and avocado. Garnish with a lime wedge and enjoy!
