Fajita Dirty Rice

(Serves 6-8)

Nothing this dirty has ever tasted so good! This at-home take on a restaurant favorite will have your taste buds begging for more. THE best base to build all your fajita bowls or as a side dish to your fav TexMex meal.

You Will Need

2 cups long grain rice
⅛ cup vegetable oil
8 oz tomato sauce
1 teaspoon salt
2 garlic cloves, minced
4 cups chicken broth OR 4 cups water with 1 cube chicken flavored bouillon
1 packet Riega® Veggie Fajita Seasoning
1 tablespoon oil
1 red bell pepper, chopped
1 red onion, chopped
1 (14 oz) can black beans, drained and rinsed
Green onion and cilantro, chopped for garnish (optional) 

Directions
  1. Heat oil in a large frying pan on medium heat. Add rice and cook until golden brown.
  2. Add chicken stock (or water + bouillon cube), tomato sauce, salt, garlic and Riega® Veggie Fajita seasoning to the pan. Stir and cover. Let simmer for 30-40 minutes (until rice is cooked and there is no liquid left). 
  3. While rice is cooking, in a medium skillet, heat 1 tablespoon of oil. Add chopped bell pepper and red onion. Sauté for 5 minutes. Remove from heat and add the drained black beans. Mix until combined. 
  4. Once the rice has finished cooking, add the pepper/onion/black bean mixture and stir until combined. Toss in some green onion and/or cilantro and enjoy!
