Loaded Chicken Bacon Ranch Casserole

(Serves 6)

Chicken, bacon AND Ranch…The trifecta of all flavors! Level up your casserole game in the easiest way. This recipe so tasty the whole family will be begging to have it again next week. Also great for hosting parties or attending a pot luck lunches at work.

You Will Need

1½ lbs baby potatoes (red or gold), cubed
2 lbs boneless chicken breast, cut into small cubes
2 teaspoons oil
Salt and pepper to taste
1 packet Riega Ranch Chicken Slow Cooker Seasoning
½ cup sour cream
2 cups shredded cheddar cheese or monterey jack cheese
½ cup cooked bacon bits
Sliced green onion for garnish

Directions
  1. Preheat oven to 400 degrees. Grease a 9×13” baking dish with cooking spray. Add potatoes. Toss them with 1 teaspoon more oil, then add half of the ranch seasoning to coat thoroughly. Place in the oven and bake for 20 minutes.
  2. While the potatoes cook, toss the chicken in sour cream and the rest of the seasoning. Add them to the potatoes once they are pulled out of the oven. No need to mix, you can disperse them on top. Return to the oven for another 20 minutes, or until the chicken is cooked through and the potatoes are done.
  3. After the dish has been removed from the oven, top with shredded cheese, bacon, and green onion. Bake for another 5 minutes. Serve warm and enjoy!
