Loaded Carnitas Fries

(Serves 6)

Forget the tortilla chips, these loaded fries are the mouthwatering, tasty treat you won’t be able to put down. It gives you that street taco flavor right out of your own kitchen! Perfect as a side dish or an appetizer for your next gathering.

You Will Need

For the loaded fries:

1 28 oz. bag frozen fries of choice
2.5 cups carnitas cooked in Riega Carnitas Seasoning
1 can (15 oz.) black beans, drained and rinsed
1 to 2 cups shredded cheese
1 cup pico de gallo
¼ cup sour cream
½ cup guacamole
1 cup fajita veggies, chopped (bell pepper and/or onion) and sauteed for garnish (optional)
Jalapeno, sliced for garnish (optional)
Cilantro, chopped for garnish (optional)
Queso fresco, crumbled for garnish (optional)

For the Meat:

1 package Riega Carnitas Seasoning
4-5 lb. pork shoulder
1 medium onion, diced
2 cloves garlic
½ cup orange juice

Directions

For the Meat:

  1. Coat the pork shoulder with Riega Carnitas seasoning. Place in slow cooker, fat side up.
  2. Add onion, garlic and orange juice.
  3. Cook on low for 8-10 hours until shreds easily.
  4. Shred with a fork and enjoy!

For the Loaded Fries:

  1. Line a baking sheet with parchment paper and follow the instructions on french fry packaging to bake.
  2. Remove fries from the oven and set the oven temperature to 350 degrees. Top the fries with carnitas and cheese, and return fries back to the oven for about 5 minutes (or until cheese is melted).
  3. Top fries with pico de gallo, sour cream, guacamole, as well as the other optional garnishes and enjoy!

*If you would like to eat this in a bowl instead of a baking sheet, simply add the baked fries to a microwave safe bowl and top with carnitas and cheese. Microwave until the cheese has melted, then top with garnishes.
