Blackened Shrimp Bowl

(Serves 3-4)

This recipe is shrimply the best! The blackened seasoning has the perfect kick that will give this bowl major flavor. Add some cilantro and lime wedges to garnish. Enjoy!

You Will Need

1 packet Riega Blackened Chicken Bowl Seasoning
2 lbs of uncooked shrimp, thawed (peeled, tail off and deveined)
3 tablespoons oil of choice (1 tablespoon for shrimp, rest for cooking)
1 bell pepper, chopped
1 red onion, chopped
2 cups broccoli, chopped
2 cloves garlic, minced
1 can sweet corn (15.25 oz)
2-3 cups of rice, cooked
Salt and pepper to season
Cilantro and lime wedges for garnish (optional)

Directions
  1. Rinse off thawed shrimp and add them to a bowl. Toss them in 1 tablespoon of oil, then pour one packet of Riega Blacken Chicken Bowl Seasoning and mix until evenly distributed.
  2. In a medium sized skillet, set heat to medium high. Add 2 tablespoons of oil then add the shrimp to the pan. Lay shrimp down so they are evenly covering the pan (as best as you can). When shrimp start to curl in slightly, flip them over and sauté on the other side.
  3. Once shrimp are cooked, transfer them to a clean bowl.
  4. In the same skillet, add your garlic, bell pepper, red onion, and broccoli. Sauté for about 10-12 minutes until veggies are cooked.
  5. To make the bowl, layer cooked rice on the bottom with shrimp and veggies on top. Add some corn, cilantro and lime wedges to garnish. Enjoy!
