Carne Asada Bowl

(Serves 4-6)

The Holy Grail of all bowl recipes. Make your meat, add a base, top with your favorite toppings and drizzle with sauce. As simple as that!  These Carne Asada Bowls will be a fan favorite around the dinner table.

You Will Need

For the Meat:

1 package Riega Carne Asada Seasoning
1 cup orange juice
¼  cup soy sauce
¼ cup oil
2 lbs. Skirt, sirloin, or flank steak

For the Bowls:
1.5 cups brown rice, cooked (makes about roughly 4 cups)
1 tablespoon olive oil
2 bell peppers, any color, chopped
Salt and pepper to season
½ cup red onion, diced
Cilantro, chopped for topping (optional)
1 cup guacamole for topping (optional)
1 cup iceberg lettuce, chopped for topping (optional)
1 lime cut into wedges

Directions

For the Meat

  1. Combine orange juice, soy sauce, oil and 1 package Riega Carne Asada seasoning. Marinate steak for 2-12 hours.
  2. Grill, sear, or sauté until desired temperature is reached. Slice and set aside for bowl.

For the Bowls

  1. In a skillet, add olive oil and set to medium heat. Add diced bell peppers and sauté until tender. Season with salt and pepper.
  2. In a bowl, layer brown rice, cooked carne asada meat, sauteed bell pepper, diced red onion, and other optional garnishes. Squeeze a lime wedge on top and enjoy!
