BBQ Salmon Sliders

(Makes 12 sliders)

Small in size but BIG on flavor. These sliders are great for any occasion – whether it’s a game day app, potluck at work or just a regular Tuesday night. BBQ Salmon Sliders are a major crowd pleaser.

You Will Need

1 dozen Hawaiian or sweet rolls, sliced in half
12 ounces of salmon, cut into 12 cubes
2 tablespoons oil
2 tablespoons Riega BBQ Glazed Salmon Seasoning
¼ cup mayo
1.5 cups cucumber, sliced
Skewers for stabilizing sliders (optional)

Directions
  1. In a bowl, toss salmon cubes with 1 tablespoon of oil.
  2. Add Riega Seasoning and coat thoroughly.
  3. On a large skillet set to medium-high heat, add 1 tablespoon of oil.
  4. Once it starts sizzling, place salmon cubes to sear on both sides for about 4 minutes each (or to desired doneness).
  5. Remove from the skillet and set aside.
  6. To assemble sliders, spread mayo on the bottom bun, then top with a cooked piece of salmon.
  7. Add sliced cucumber, then top with the other piece of bread. Enjoy warm or cold!
