Turkey Chili

(Serves 4-6)

Chili so good it could win a chili cookoff! The perfect recipe for a cold day. Keep your family warm and their bellies full with a delicious bowl of  Turkey Chili. Try with sour cream, cheese, jalapenos or corn for added flavor.

You Will Need

2 tablespoons oil
2 tablespoons tomato paste
1 medium to large onion, chopped
5 cloves garlic, minced
1/2 red bell pepper, chopped
1 packet Riega Taco Seasoning OR Riega Chili Seasoning
1 pound ground turkey breast
1 cup stock (beef, preferably)
1 (28 ounce) can diced tomatoes
1 (15½ ounce) can kidney beans, drained
½ teaspoon hot sauce
Salt and pepper to taste
Sour cream, shredded cheese, jalapenos, or roasted corn for garnish

Directions

1. Heat the oil in a large pot over low to medium heat. Add the tomato paste, onion, garlic and red pepper. Sauté until softened. Add the Riega Taco Seasoning OR Riega Chili Seasoning and sauté until fragrant.
2. Add the ground turkey, crumbling with a wooden spoon until browned. Pour in the beef stock and allow it to cook down slightly.
3. Add in the canned tomatoes, beans, and hot sauce. Allow for the chili to simmer for about 20 minutes covered, then 20 minutes uncovered (or until you’ve reached your desired thickness– depending on how much the liquid has reduced).
4. Season with salt and pepper, add optional garnishes, and enjoy!
