One Pot Hatch Green Chili Chicken Soup

Looking for an easy soup recipe with a kick? Here is your recipe. This hatch green chili chicken soup brings the heat…literally. It’s a healthy meal you won’t be able to resist, especially if you add a little lime and cotija cheese on top.

You Will Need

1 packet Riega® Hatch Green Chili Bowl Seasoning
2 tablespoons olive oil
1 onion, chopped
3 cloves of garlic, minced
3 cups chicken stock
1 (14 oz) can white beans, drained and rinsed
1 (16 oz) jar salsa Verde
1 green bell pepper, chopped
1 jalapeno, seeded and minced
1.5 lbs. chicken breast, cut into 1-2” cubes
1.5 teaspoons cumin
Lime wedges, cilantro or cotija cheese for garnish

Directions
  1. In a large pot, heat olive oil and sauté onions and garlic for 3 minutes, or until translucent.
  2. Add all the remaining ingredients to the pot (chicken stock, Riega® Hatch Green Chili Bowl Seasoning, white beans, salsa Verde, bell pepper, jalapeno, chicken, cumin).
  3. Bring pot to a simmer, and cook for 30-40 minutes, or until chicken is cooked through.
  4. Top with lime wedges, cilantro or cotija cheese. Serve and enjoy!

Tip: Short on time? You can also add a full shredded rotisserie chicken instead of chicken breasts. Let simmer until warm. Serve and enjoy!
