Sweet Potato Fry Nachos

(Serves 5)

Hearty, colorful, and totally crave-worthy—this is comfort food with a kick.

You Will Need

Riega Guajillo garlic seasoning to taste

Salt & Pepper to taste

2 tbs Olive oil

1-2lbs Boneless skinless chicken thighs

3-4 medium sweet potatoes

1 can black beans

Optional Toppings:

1/2 white onion

Baby tomatoes

Cilantro

Cheese of choice (we used Cotija)

Directions

1. Season chicken generously with Riega’s Guajillo Garlic Griller.

2. Cook chicken in a skillet or pan until juicy or until it reaches 165°F internally.

3. Peel sweet potatoes and cut into even strips.

4. Toss cut sweet potatoes with olive oil, salt, and pepper to taste.

5. Cook at 400°F in the oven for 30 min stirring halfway. Or, cook in the air fryer for 15 min without overcrowding, use 2 batches if needed.

6. Heat black beans; *optional: mix with Riega Taco seasoning for extra flavor.

7. Assemble with fries, chicken, beans, and toppings of choice.

*Note: also good for breakfast with an egg on top
