Grilled Vegetable Slaw

You Will Need

For the Slaw:
½ Green Cabbage
½ Red Cabbage
2 large Carrots, peeled
1 medium Red Onion
Olive Oil
4 tsp. Fresca Griller Seasoning

For the Slaw Dressing:
½ cup Mayonnaise
2 tsp. Riega Fresca Grill Seasoning
1 tbsp. fresh Lime Juice
2 tbsp. Salsa Verde

Directions
  1. Cut each cabbage half into quarters, keeping the core intact on each quarter so the leaves stay connected.
  2. Cut the red onion into ½” sliced rings (keeping each slice intact to create 4-5 whole rings).
  3. Brush both sides of the cut cabbages with olive oil, then season with two teaspoons of Fresca Grill seasoning to lightly coat all sides.
  4. Brush the onion rings and carrots with olive oil, then season with the remaining two teaspoons of Fresca Grill seasoning on all sides.
  5. Heat an outdoor grill to medium heat. Grill all vegetables for 4-5 minutes per side until charred. Transfer to a sheet pan or large cutting board to cool.
  6. While the vegetables cool, stir the slaw dressing ingredients together in a large bowl and set aside.
  7. Once the vegetables are cool enough to handle, thinly slice the cabbages and onions and transfer to the bowl with the slaw dressing. Grate the carrots in the large holes of a box grater and transfer to the bowl, as well.
  8. Toss to coat the vegetables in dressing, and serve.
