Fresca Grilled Tomato Salad

(Serves 4-6)

Experience the essence of summer with our Grilled Tomato Salad – a vibrant combination of flavors that celebrates the sun-ripened sweetness of tomatoes and the smoky allure of the grill. Get ready to elevate your salad game to new heights.

You Will Need

6 large, firm Roma Tomatoes
2 ears of Corn, shucked and cleaned
Extra Virgin Olive Oil
1 tbsp. + 1 tsp. Riega Fresca Grill Seasoning, divided
1 Avocado, diced
⅓ cup finely chopped Red Onions
⅓ cup crumbled Feta Cheese
5-6 small Sweet Peppers, thinly sliced
¼ cup finely chopped Cilantro
Flaky Sea Salt
Fresh Lime Wedges

  1. Cut tomatoes in half lengthwise. Lightly brush the cut sides of the tomatoes with olive oil, then sprinkle with two teaspoons of Fresca Grill Seasoning amongst the tomatoes. Set the tomatoes aside.
  2. Brush corn with olive oil, then season each with ½ tsp. Fresca Grill Seasoning. Set aside with tomatoes.
  3. Heat an outdoor grill to medium heat. Once the grill is hot, grill tomatoes (cut side down) and corn for 4-6 minutes until charred. Turn the corn frequently to char all sides. Turn the tomatoes over after 4-6 minutes and grill for an additional 1-2 minutes. Transfer both to a cutting board.
  4. Once the tomatoes are cool enough to handle, cut them into quarters. 
  5. Once the corn is cool enough to handle, cut off the kernels and discard the cob.
  6. Scatter quartered tomatoes, grilled corn, diced avocado, red onion, feta cheese, and cilantro across a serving platter and sprinkle with another teaspoon of Riega Fresca Grill seasoning.
  7. Serve on a platter with a drizzle of good olive oil, a sprinkle of flaky sea salt, and a squeeze of fresh lime juice.
