Barbacoa Chili

(serves 8-10)

Barbacoa Chili…it doesn’t get better than this! When it comes to classic comfort food, nothing quite hits the spot like a steaming bowl of hearty homemade chili. Bursting with robust flavors, tender chunks of barbacoa, and a medley of spices, this recipe is sure to become a family favorite. You Will Need

For the Barbacoa:

2 lb. beef roast
1 onion, diced
½ cup water
1 packet Riega Barbacoa Seasoning

For the Chili:

1 tablespoon oil of choice
2 large onions, chopped
2 bell peppers, chopped
2 tablespoons garlic, minced
1 packet Riega Taco Seasoning  OR  Riega Organic Chili Seasoning
2 cans black beans drained and rinsed
2 cans navy beans drained and rinsed
2  28 oz. cans crushed tomato
Salt and pepper to taste
Shredded cheese for garnish (optional)
Jalapenos, diced for garnish (optional) 

Directions

For the Barbacoa:

  1. Coat beef roast with Riega barbacoa Seasoning. Place in a slow cooker.
  2. Add onion and water.
  3. Cook on low for 6-8 hours.
  4. Shred with a fork and enjoy! (Save the cooking liquid)

For the Chili:

  1. In a large stockpot, heat oil over medium heat and add onions, bell pepper and garlic. Sauté until tender. 
  2. Add Riega Taco Seasoning OR Riega Chili Seasoning and stir. Add the beans and crushed tomato and simmer for 10-15 minutes.
  3. Add the beef to the pot, plus 1 cup of its cooking liquid (more if you want a thinner consistency) and let simmer for 30 minutes.
  4. Garnish and serve!
