One Skillet Cilantro-Lime Chicken

(Serves 2)

The ultimate one-skillet meal that is PACKED full of flavor. This zesty recipe is as delicious as it is easy! Make it once and your family will be begging to have it again. Garnish with leftover limes and cilantro for added presentation.

You Will Need

2 boneless, skinless chicken breasts
2 tablespoons oil
1 pouch Riega Zesty Lime Chicken Bowl Seasoning
1 clove of garlic, minced
½ cup white onion, diced
½ cup green bell pepper, diced
1 cup chicken broth
½ cup heavy whipping cream
1 lime, half for juicing and half for garnishing
¼ cup cilantro fresh, chopped plus extra for garnish
Salt and pepper to taste
2 cups cooked white rice for serving

  1. Preheat oven to 375 degrees. 
  2. In a bowl, add chicken breasts and drizzle with oil. Toss in Riega Zesty Lime Seasoning and mix to coat thoroughly. 
  3. In a large cast iron skillet on medium heat, add oil. Once it starts to sizzle, add chicken breasts and cook for about 5-7 minutes on each side, or until nice and browned. Remove the chicken from the skillet and set aside. 
  4. Add oil to the skillet, then add garlic, diced onions, and green pepper. Sauté for about 5 minutes or until tender. Add 1 cup of chicken stock, heavy cream, cilantro and lime juice to the pan and let cook for about 4 minutes, or until liquid has slightly reduced. Turn off the heat. 
  5. Slice the chicken, then add it back to the skillet with the sauce. Bake the skillet in the oven for 10 minutes, or until the chicken finishes cooking all the way through. 
  6. Top with more lime wedges, cilantro and serve with rice. Enjoy!
