1.5-2 lbs pork tenderloin
2 tablespoons of oil
1 packet Riega® Hawaiian Chicken Seasoning
4 sweet potatoes
Salt and pepper to season
Ranch for drizzling (optional)
Coleslaw for garnish (optional)
1. Preheat the oven to 300 degrees.
2. Coat beef tenderloin with 1 tablespoon of oil, then toss in Riega® Hawaiian Chicken Seasoning.
3. Place tenderloin on a lined sheet tray and bake for about 6 hours.
4. When the tenderloin has 1 hour of cook time left, toss the sweet potatoes in olive oil, season with salt and pepper, then add them to the tenderloin sheet tray. Continue to bake.
5. To assemble, shred pork and load onto baked sweet potatoes. Garnish with coleslaw and drizzle with ranch (optional). Enjoy!
