Asada Grilled Steak Skewers

(Makes 6 Skewers / Serves 4-6)

You Will Need

1 ½ lbs. Grilling Steak (strip, ribeye, or sirloin)
¼ cup Extra Virgin Olive Oil
1 tbsp. Riega Asada Griller Seasoning
4 fresh Jalapenos
½ small Red Onion
2 cups cubed pineapple, 1” cubes

Directions
  1. Cut steak into 1” cubes. Cut one jalapeno and the red onion into very thin slices (these will marinate with the steak).
  2. Toss cubed steak with olive oil, Asada Grill seasoning, the thinly sliced jalapeno, and thinly sliced red onion. Cover and refrigerate for at least an hour (or up to 24 hours).
  3. When ready to make the skewers, cut the remaining three jalapenos into ¼”-½” thick slices.
  4. Thread the marinated steak, pineapple, and fresh jalapeno slices onto skewers, alternating each ingredient as you thread it onto the skewer. For maximum flavor, try to incorporate the marinated jalapenos and onions with the steak pieces while threading them onto the skewers.
  5. Heat an outdoor grill to medium-high heat. Once the grill is hot, grill skewers for 2-3 minutes per side until charred, and steak registers at least 135 F for medium rare, or 145 F for medium.
  6. Transfer skewers to a serving platter, tent with foil, and rest for 5 minutes before serving.
  7. Serve with grilled vegetables, rice, or your favorite side dish.
