You Will Need

2 tbs Riega® elote seasoning

1 bag frozen corn

1/4 cup mayo

juice of one lime

2 tsp lime zest

1 clove garlic minced

1/4 cup chopped cilantro

1/2 cup cotija cheese

 

Directions
  1. Heat or char the corn then let cool for a few minutes.
  2. In a large bowl, whisk together the mayonanse, lime juice, lime zest, Riega® elote seasoning, and garlic until smooth.
  3. Mix the dressing into the corn until well combined.
  4. Garnish with cilantro and cotija cheese. Serve and enjoy.
