Chicken Fajita Foil Packets

(Serves 4-6)

Get ready to elevate your meal prep with our mouthwatering Chicken Fajita Foil Packets seasoned with our Pollo Rojo seasoning. Bursting with the vibrant flavors of sizzling chicken, colorful bell peppers, and zesty seasonings, these packets are a convenient and delicious.

You Will Need

For Foil Packets:
1 lb. Chicken Breast
1 Red Bell Pepper
1 Green Bell Pepper
1 White Onion
1 tbsp. Riega Pollo Rojo Seasoning
2 tbsp. Extra Virgin Olive Oil

For Serving:
6” warmed Tortillas
Sour Cream
Shredded Cheese
Lime Wedges

  1. Cut the chicken breast, bell peppers, and onions into thin slices. Toss with Pollo Rojo seasoning and olive oil in a large bowl, then cover and refrigerate for at least an hour (up to eight hours).
  2. Cut foil into six large, 10” squares. Divide marinated chicken and vegetables between the squares, placing them directly in the center of each square.
  3. Fold the sides of the foil towards the center until they meet, then crimp them together to create a seal. Repeat with the other sides to seal the foil packets shut.
  4. Heat an outdoor grill to medium heat. When hot, grill the foil packets, seam-side-up, for about ten minutes. Flip the packets over and grill them seam-side-down for another 5-7 minutes until chicken is cooked to 165 F and vegetables are very tender. (Carefully check one of the packets at this time.)
  5. Remove the packets from the grill and let them cool for 1-2 minutes.
  6. Open the foil packets, squeeze with lime juice, then serve the chicken and vegetables on warmed tortillas and all of the toppings.
